HomeDecGal Chow…Roasted Corn

HomeDecGal Chow…Roasted Corn

Summer has arrived and that means fresh corn. Delicious, sweet, crunchy, fabulous corn.

I usually boil corn and cut if off the cob.  It is easier to eat and I can to scrape the cobs for added yummy, starchy goodness.  I like to keep it simple and season with butter, sea salt, fresh ground pepper and hot pepper flakes.

Tonight I planned to cook steaks for HomeDecGuy and me.  It is just the two of us so there was plenty of room on the grill.  I thought I would give grilled corn a try.  I have experienced grilled corn that was chewy and dry.  That is why I never put one of my favorite vegetables on the fire.  I looked online for recipe ideas and found this easy method at for grilled corn in the husk.

We loved it!  I might not ever boil summer corn again.

Here is how:

Peel back the husks and remove the silks.  Wash in cold water and sprinkle with salt, pepper and a few pats of butter.

Wrap the husks back over the seasoned corn.

Wrap the ear of corn in foil.  This will let the corn steam so it will not be dry or burned.

Cook on a medium grill about twenty minutes, turning occasionally.

When you unwrap the foil the corn is roasted on the outside and juicy on the inside and it smells wonderful!

Wishing you a wonderful summer filled with all your favorite foods!
