HomeDecGal Chow….Mango Salsa

Okay, I love to cook.  I think about what I am going to cook all day, and then can’t wait to get started and facebook has turned me into a crazy, food photo sharing geek.  My HomeDecGuy Rodger knows to wait for the photo before he picks up the fork. It is certainly a family trait, many of my relatives are just as food-obsessed as I am.  So there… I can’t help myself and since I now have my own website and blog there will be food.

I don’t write recipes or claim to be a chef or expert.  I am handy in the kitchen and love to try new things.  I believe home-cooked meals are healthier, affordable and the bottom line….cooking and sharing food is an act of love.

Speaking of love, we love mangos and this salsa is super easy and so delicious we could eat this everyday.  It’s great served with grilled chicken, pork or fish.  And if you are looking for an easy vegetarian meal there is nothing better than a bean taco with avocado, tomato and mango salsa.  An arugula salad dressed with mango salsa, goat cheese and toasted pistachios will knock your socks off!

Cut mango into small cubes.


Add some diced Spanish or red onion.


Add chopped jalapeno peppers


Add fresh cilantro


Stir together

    Oh YES. That sounds awesome. Also glad to hear you’re grilling your corn. ….so much better that way. Problem is I really miss the corn we used to get in Ohio and PA.
